Biscuit Recipe

As promised, here is the biscuit recipe:

2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup chilled buttermilk

1. Preheat oven to 450
2. In a large mixing bowl combine the flour, baking powder, baking soda and salt. Using your fingertips, rub the butter and shortening into the dry ingredients until mixture looks like crumbs. (The faster the better, to keep the fats from melting)
3. Make a well in the center and pour in the buttermilk. Stir until the dough just comes together. It will be very sticky!
4. Turn dough onto floured surface and gently fold it over on itself 5-6 times. Press into 1 inch thick round.
5. Cut the biscuits with a 2 inch cutter, being sure to push straight down into the dough.
6. Place biscuits on baking sheet so they just touch each other. Reform the scrap dough, working it as little as possible. The biscuits from the second pass will not be as fluffy and light, but they will still be yummy. If you don't care about the biscuit shape you can cut the entire batch the first time, using a knife. I like to use the biscuit for the first pass and then cut the remainder because I really like the biscuit shape.
7. Bake until biscuits are tall and light gold on the top - about 15 or 20 minutes.

Last night we went for a couple mile walk, and visited our town center for the monthly art walk. It's great to see what the local artists are making and give the dogs a chance to see lots of people!

A 30 minute run is my plan for today. I will hit the gym on my way home, so that when I get home I can just chill out.
